All our beef comes from our herd of pedigree South Devon cattle. This native British breed is fed almost exclusively on grass, grazing outdoors on clover-rich pastures in the summer and eating our own conserved grass in the winter. This gives a special intense flavour to our beef, which cannot be found from animals fed intensively on cereals. Drinking water for the herd also comes from deep chalk springs on the farm therefore enabling us to be able to guarantee the quality of the cows' water as well as their feed.
South Devons have a high proportion of intramuscular fat, known as "marbling". During cooking, on certain cuts, this fat continually bastes the meat, making it juicy, full of flavour and meltingly tender. We also follow the practice of hanging our beef for at least 3 weeks here on the farm, ensuring to add yet more to the flavour and the tenderness to our beef.
Weekly butchering, by Stephen here on the farm, occurs at the beginning of the week, to provide for our farm shop on site, and for Sunday Farmers' Markets. We will always aim to fulfill your order as quickly as we can.
